Where do Macaron come from?

At the Versailles Court in Paris, during the reign of Louis XIV, members of the Dalloyau family, whose descendants later founded the gastronomy house of the same name, are credited with inventing the Macaron.

In the 1830s macaron were served two-by-two with the addition of jams, liqueurs, and spices. The modern Macaron is the Gerbert, born in the 1880s in the Beleville neighbourhood of Paris, invented by the French P‚tisserie LadurČe.

Macaron are hugely popular across France and any visitor to Paris, or to any other town and city across the country, will no doubt have been struck by the wonderfully bright colours and infinite number of flavours available in specialist patisseries.

 

How do you eat a Macaron?

First you hold the Macaron in your hand, look at it, admiring its elegant shape and beautiful colour. Then, without hesitation, take your first bite. Your first sensation will be the crunch of the crispy outer shell of the biscuit. A moment later you’ll experience the mingling sweetness of the almonds and sugar, together with whatever natural flavour has been added, whether fruit, essence or something more unusual. You’ll be wonderfully surprised by the fondant texture. This is then enhanced by the luxurious smoothness of the creamy filling in the centre. All in all, it’s a symphony of sensations in a single pastry. We guarantee you won’t be able to resist taking another bite.

 

What flavour do Bougie Macaron come in?

We have three types: Classic Macaron, Seasonal and, for the gourmand, Unique Macaron

The Classic: vanilla, chocolate, raspberry, lemon, pistachio

The Seasonal: this Spring we’re offering marron (chesnut) and reglisse (liquorice)

The Unique: Constantly being developed in our Bougie laboratory, include foie gras and other luxury and unusual ingredients
